Grease traps are designed to capture not only fats, oil and grease (FOGs) but any solid waste that flows through your plumbing system. By neglecting to clean your grease traps, you run the risk of experiencing plumbing issues and damage to your pipes, which will require costly repairs and the temporary shutting down of your restaurant.
As certified technicians, CCE will provide you with documentation of inspection and service that comply with Alberta regulations (see below).
An owner or operator of Food Service Operation who installs one or more oil and grease interceptors must keep a record of all inspection and maintenance activities for the oil and grease interceptor for two years, including the:
(a) Date of inspection or maintenance;
(b) Description of inspection or maintenance conducted;
(c) Quantity and description of material removed from the oil and grease interceptor; and
(d) Name, civic and postal address, and telephone number of the disposal or recycling company or facility collecting or transporting the material removed from the oil and grease interceptor.
It depends on how much FOGs and food is collected in the grease traps.
The City of Calgary recommends: "At least once every four weeks OR more often if FOG and solids exceed 25 per cent volume of the grease interceptor."
